Ingredients need to make the sticky date pudding recipe

  • 1 3/4 cups all-purpose flour
  • One tsp bicarbonate of soda (baking soda)
  • 1 1/2 cups boiling water
  • 1 1/2 cups boiled water
  • 125 g butter, softened
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 250 g Medjool dates, ground and chopped

For the caramel sauce

  • 1 cup brown sugar
  • 300 g thick cream
  • 1 tsp vanilla extract
  • 60 grams butter

Method of making sticky date pudding recipe

  1. Preheat the oven to 180°C. Chicken and line the base of a 7 cm deep, 22 cm (base) cake pan.
  2. Put dates and baking soda in a bowl. Pour over boiling water. Let stand for 20 minutes.
  3. Using an electric mixer, beat butter, sugar, and vanilla until pale and creamy. Add eggs, one after the other beat well in the same way. Using a large metal spoon, mix the date mixture and flour well.
  4. Spoon the mixture into the prepared cake pan. Bake for 35-40 minutes or until a skewer inserted in the center comes out clean. Remove on a plate.
  5. Make the sauce. Mix all the ingredients in a saucepan on medium heat. Cook, stirring occasionally, till the sauce comes to a boil. Keep the flame to medium-low. Boil for 2 minutes.
  6. Pierce the pudding from all sides with a skewer. Pour 1/2 cup hot sauce over the hot pudding. Stand for 10 minutes. Cut into wedges. Serve with remaining chutney.
