Ingredients need to make satay chicken curry recipe

  • 300 gms chicken breast
  • 500 ml coconut milk
  • 1.2 tbsp brown sugar
  • 4 tbsp soy sauce
  • 1 tbsp tamarind paste
  • 5.5 tbsp Thai Red Curry Paste
  • 3 tbsp chili chutney peanut butter
  • 3 tbsp Sriracha Sauce
  • Three tbsp oil
  • 6-7 garlic cloves (finely chopped)
  • Red Jalapeno (seedless, finely chopped)

For Garnishing:

  • Chopped Coriander Red Jalapeno (rounded)

Method of making satay chicken curry recipe

  1. Cooking Instructions: For the Marinate (Last Night), whisk the following in a bowl until runny and set aside: Coconut Milk – 100 ml Chili Sauce Peanut Butter – 2 Tbsp Brown Sugar – 1/2 tbsp Thai Red Curry Paste – 2.5 tbsp Soy Sauce – 2 tbsp
  2. Add 300 grams of medium-sized chopped chicken. If you want to cook quickly, you can cut the chicken into small pieces.
  3. After mixing, let it marinate overnight for about 12 hours so that the chicken absorbs all those flavors and spices.
  4. For Spicy Peanut Sauce: Mix the following ingredients well in a bowl and keep aside: Coconut Milk – 400 ml Chili Sauce Peanut Butter – 1 Tbsp Soy Sauce – 2 Tbsp Brown Sugar – 1 Tbsp Thai Red Curry Paste – 3 tbsp Tamarind paste – 1 tbsp Sriracha sauce – 3 tbsp
  5. Last step: Put 1 tbsp oil in a hot pan – add marinated chicken and let it cook for 6-7 minutes. After it is 80% cooked, keep it aside in another bowl.
  6. Again put 1 tbsp oil in the hot pan. Add minced garlic and finely chopped red jalapenos. When the jalapenos become small in size, add the spicy peanut sauce prepared in step 4.
  7. Cook the gravy on low flame till it thickens, now add cooked chicken to it.
  8. You can have this delicious spicy chicken curry on a bed of steamed rice. Garnish with coriander and some red jalapenos.
