Ingredients need to make the Mexican chicken nachos recipe
- 1 kg boneless and skinless chicken (breast and Thai meat mix)
- 1 (cut into inch long thin slices) green capsicum
- One (cut into thin slices like ¾ inch long) yellow capsicum
- 1 (cut into thin slices like ¾ inch long) red bell pepper
- 2 or 3 (sliced into thin rounds) alpinos
- 1 cup cooked black beans
- 1 red onion
- Mexican Cheese – Much better depending on your love for cheese
- one bag of tortilla chips
For Chicken Marination
- 1 1/2 to 2 tsp red chili powder
- One tsp salt
- 1 tsp (according to your spice level) black pepper powder
- 1 tbsp olive oil
- One tablespoon of basil or oregano
Method of making Mexican chicken nachos recipe
- Massage all the ingredients mentioned in the marination list with the chicken.
- Take a 12-inch pan and heat some oil in it.
- Add marinated boneless chicken and cook without closing the lid.
- After cooking for 10 minutes, let the juice of the chicken come out and keep stirring the chicken in between so that it does not burn.
- Chicken should be ready within 30 minutes of cooking.
- Taste the salt and if required add accordingly at the end.
Arrangement of Nachos in Aluminum Pan:
- Take a square-shaped aluminum pan as shown in the picture. Grease the pan with oil.
- Apply a layer of tortilla chips. Add onion, green chili, red chili, yellow pepper, black beans, cooked chicken, and jalapeno on top of it.
- Add plenty of Mexican cheese.
- Repeat the layering process 3 or 4 times depending on the size of the pan and your available ingredients and the cooked chicken.
Baking Process in Convection Oven:
- Preheat the oven to 180 C. Place the square pan in the oven and bake it for 18 – 20 minutes and the final dish is ready!
