Ingredients need to make the french omelette recipe
- 2 eggs
- 2 milk
- pinch kosher salt and freshly ground black pepper
- 1 unsalted butter
Method of making french omelette recipe
- Combine eggs, milk, salt, and pepper in a medium bowl and mix well with a fork or whisk. Set the plate near the stove. Heat a small (about 6-inch) omelet pan or non-stick skillet over medium-high heat.
- When the pan is hot, add butter (it should crackle slowly). Swirl the pan to distribute it as the butter melts. When the butter stops heating and the foam subsides, add eggs.
- Wait for the eggs to warm slightly and then stir vigorously with a heatproof spatula, making sure you incorporate the sides of the egg mixture occasionally so that the omelet cooks evenly.
- Once the eggs are set, gently run the pan over the burner to release the omelet from the pan.
- Check to see if it is not sticking to the sides or bottom of the pan, if so, release the omelet with a heat-proof spatula. Hold the pan at an angle of 45 degrees to the stove and flip the omelet carefully like a business letter.
- Cook until the pan rises or lowers the heat to a degree to prevent browning. (There is no browning in a classic omelet.) Remove and serve on a hot plate.
