Ingredients need to make eggs benedict with the sesame bagel recipe

  • 1 tbsp black pepper
  • White wine vinegar divided – 2 cups + 3
  • 3 large egg yolks
  • 1 cup unsalted butter, melted and skimmed
  • 1 tbsp fresh lemon juice
  • 1/2 tbsp kosher salt
  • 1/2 tbsp black pepper
  • 4 large eggs
  • 4 ham, sliced
  • chives
  • 2 Sesame Bagels and Toast

Method of making eggs benedict with the sesame bagel recipe

  1. Combine pepper and 2 cups vinegar in a small saucepan over medium-high heat. Cook until reduced by half, about 30 minutes.
  2. Remove from heat, and remove black pepper. Set aside 2 teaspoons of vinegar reduction in a small bowl. Save the leftovers in an airtight container for another use.
  3. Bring 950 ml of water to a boil in a large saucepan over medium-low heat. Place a heatproof bowl on the pan. Add egg yolk and vinegar reduction, whisking continuously until a ribbon is formed when the whisk is lifted.
  4. Remove the bowl from heat, and slowly whisk in a cup of melted butter. Return the bowl to the saucepan and cook for 2 minutes, stirring constantly.
  5. Repeat process with remaining buttermilk until hollandaise mixture is slightly looser than mayonnaise. Whisk in lemon juice, salt, and pepper. Keep aside.
  6. Boil 3 inches of water in a large saucepan over high heat, reduce the heat to medium-low and bring to a boil. Add remaining vinegar, and stir rapidly to create a swirl.
  7. Break 1 egg, and swirl it. Boil for 2 to 3 minutes, and remove with a slotted spoon. Repeat with the remaining eggs.
  8. Spread a small amount of hollandaise on each bagel half, and top each with 1 ham slice and 1 poached egg. Serve with more sauce and chopped chives.
