Ingredients need to make barbecue rice recipe

Rice and vegetables:

  • 250 g long-grain white rice
  • 2 tbsp olive oil
  • 1 medium onion, sliced
  • 2 garlic buds
  • 1 bell pepper
  • 1 piece of leek
  • 2 Tomatoes, chopped
  • salt and pepper as per taste

BBQ Sauce:

  • 3 tbsp tomato paste
  • Tomato paste not tomato puree or sauce
  • 2 red wine vinegar
  • 4 tbsp Worcestershire sauce or vegan alternative
  • 2 tbsp honey
  • 1 tsp medium mustard
  • 1/2 tsp hot smoked paprika
  • 1/2 tsp chili flakes
  • tsp turmeric
  • 1 tsp ground coriander
  • 1 ground cumin
  • Salt and pepper
  • 1/2 cup water or as needed

Garnish:

  • 1 Tomato, chopped
  • 2 tsp leek or green onion
  • Chives or parsley

Method of making barbecue rice recipe

  1. Boil the rice, making sure it is not sticky or pulpy. Keep it aside.
  2. Meanwhile, prepare the rest of the dish. Cut the onion. Heat oil in a big pot. Cook the onions until translucent, about 3-4 minutes.
  3. Finely chop the garlic and leek, add to the pot and cook for 2-3 minutes while stirring continuously.
  4. Cut capsicum and tomato. Put them in the pan and cook for 2-3 minutes more.
  5. In a small bowl, whisk together all the BBQ sauce ingredients except water. Pour into the pan, add a cup of water, cover the pan and boil for about 5 minutes while stirring a few times in between.
  6. Check PAN. If the sauce seems dry, add the remaining cup of water and mix well. Cook for another 5 minutes or till the vegetables become soft and the chutney thickens well without drying.
  7. Add filtered rice, and mix well. Adjust to taste with salt, pepper, and, if necessary, a pinch of sugar and/or more vinegar.
  8. Garnish with chopped tomatoes, green onions, parsley, or chives.
  9. The dish is ready!
