Ingredients need to make navratan pulao recipe

  • 2 cups basmati rice (80% cooked)
  • 80 grams paneer cubes
  • 1/4 cup French Beans, chopped
  • 1 tsp Ginger, chopped
  • 1 tsp garlic paste
  • 1/4 cup peas (boiled)
  • 1 tsp lemon juice
  • 1/2 cup potato (cut into small pieces)
  • 1/2 cauliflower florets
  • 1 medium Carrot, cut into pieces
  • 2 tbsp saffron milk
  • 1 bay leaf
  • 2 black cardamoms
  • 3 green cardamoms
  • 3 cloves
  • 1 cumin
  • 1-inch cinnamon
  • 5 almonds
  • 5 cashew nuts
  • 1/4 cup oil
  • 1 tbsp raisins
  • 1 tbsp ghee

Mrthod of making navratan pulao recipe

  1. Cook the rice till about 80% and keep it aside for some time.
  2. Now heat 1/4 cup oil in a pan on medium heat. When it becomes hot, add potato pieces and fry for 30-40 seconds.
  3. Add the chopped carrots and mix, cook for about 30 seconds, then add the French beans and cook them, stirring constantly, until all the vegetables are slightly soft and mushy.
  4. Take them out from the oil. Use the same oil to fry the paneer till it turns light brown and once done take them out.
  5. Put cauliflower in the same pan and fry till it becomes light brown.
  6. After the cabbage is roasted, add boiled peas, cashews, raisins, and almonds and fry for about 30 seconds, while stirring occasionally.
  7. Add finely grated ginger, garlic paste, cloves, bay leaves, cinnamon, and green cardamom and fry for 30-40 seconds while stirring continuously.
  8. Add cooked basmati rice, salt, ghee, mix well, cook on medium flame, while stirring occasionally.
  9. Heat ghee in another pan, when it becomes hot, add cumin seeds and mix well.
  10. When cumin seeds start crackling, add the saffron milk and 2 tbsp water. When it starts boiling, add it to the pan along with the pulao and mix well.
  11. Add pre-fried vegetables like potatoes, carrots, french beans, cauliflower, and paneer.
  12. Mix all the things well. Add lemon juice and mix well again. Cover the pan and cook on medium heat for about 10 minutes.
  13. Serve and enjoy!
