Method of making habanero roasted chicken recipe
- Place the chicken in a roasting pan and keep aside. Meanwhile, in a small mixing bowl combine lemon juice and garlic.
- Pour the lemon mixture over the chicken and coat it all around.
- Season chicken with salt, cover and rest on kitchen counter for 30 to 60 minutes.
- Meanwhile, chop chili and garlic, put in a blender or food processor.
- Add lemon juice, salt and pepper. Blend until blended. Then add paprika and oil, continue the process until smooth and completely combined.
- Add more chili, or salt and pepper, if necessary, to enhance the flavor of the seasonings.
- Preheat oven to 400˚F. Roast the prepared chicken for about 32 to 35 minutes or till it is cooked.
- Taste with its juice in the middle of cooking. Chicken is cooked until internal temperature reaches 165˚F. Use a thermometer for instant reading for accuracy.
- Meanwhile, heat a griddle on medium heat. Remove chicken from oven and brush all sides with prepared sauce.
- Put the chicken pieces on the hot griddle and cook for 2 minutes or till it turns brown from all sides.
- Flip the chicken and continue cooking for 2 minutes, or until brown on the other side and serve.
