  • 2-3 habanero peppers
  • 3 tbsp lemon juice
  • 4 garlic cloves 2
  • 2 tsp salt
  • 1 tsp freshly ground black pepper
  • 2 tsp sweet or smoked paprika
  • 1/4 cup olive oil
  • Fresh parsley, sliced, for garnish

Method of making habanero roasted chicken recipe

  1. Place the chicken in a roasting pan and keep aside. Meanwhile, in a small mixing bowl combine lemon juice and garlic.
  2. Pour the lemon mixture over the chicken and coat it all around.
  3. Season chicken with salt, cover and rest on kitchen counter for 30 to 60 minutes.
  4. Meanwhile, chop chili and garlic, put in a blender or food processor.
  5. Add lemon juice, salt and pepper. Blend until blended. Then add paprika and oil, continue the process until smooth and completely combined.
  6. Add more chili, or salt and pepper, if necessary, to enhance the flavor of the seasonings.
  7. Preheat oven to 400˚F. Roast the prepared chicken for about 32 to 35 minutes or till it is cooked.
  8. Taste with its juice in the middle of cooking. Chicken is cooked until internal temperature reaches 165˚F. Use a thermometer for instant reading for accuracy.
  9. Meanwhile, heat a griddle on medium heat. Remove chicken from oven and brush all sides with prepared sauce.
  10. Put the chicken pieces on the hot griddle and cook for 2 minutes or till it turns brown from all sides.
  11. Flip the chicken and continue cooking for 2 minutes, or until brown on the other side and serve.
