Method of making khatta meetha baingan recipe
- Wash and wipe the brinjal and cut it.
- Heat the oil and deep-fry the brinjals on high flame till they become slightly soft, but still retain their shape and color.
- Take 1/4 cup oil in another pan, add cumin seeds and when it starts spluttering, add ginger.
- Fry it till light brown color.
- Add tomatoes and tomato puree, mix well and add coriander, turmeric, garam masala, chili powder, salt, sugar, and vinegar.
- Fry till the oil separates.
- Add brinjal, green chili, and half green coriander.
- Cook for about 5 minutes more.
- Garnish with the remaining green coriander and serve hot.
