  • Oil for frying 10-12 small brinjals
  • 1 tsp cumin
  • 1 tbsp ginger, finely chopped
  • 1/2 cup Tomatoes, finely chopped
  • 1 cup tomato puree
  • 2 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 2 tsp salt
  • 1 tsp chili powder
  • 1 tbsp sugar
  • 1 tsp vinegar
  • 1/4 cup coriander leaves, chopped
  • 1 tsp green chili, finely chopped

Method of making khatta meetha baingan recipe

  1. Wash and wipe the brinjal and cut it.
  2. Heat the oil and deep-fry the brinjals on high flame till they become slightly soft, but still retain their shape and color.
  3. Take 1/4 cup oil in another pan, add cumin seeds and when it starts spluttering, add ginger.
  4. Fry it till light brown color.
  5. Add tomatoes and tomato puree, mix well and add coriander, turmeric, garam masala, chili powder, salt, sugar, and vinegar.
  6. Fry till the oil separates.
  7. Add brinjal, green chili, and half green coriander.
  8. Cook for about 5 minutes more.
  9. Garnish with the remaining green coriander and serve hot.
