  • 2 cups flour
  • Salt as per taste
  • 2 tbsp ghee or oil
  • 2 tbsp curd
  • 1 cup besan
  • 1 tbsp mint leaves, chopped
  • 1/2 tsp turmeric powder
  • 1 tbsp coriander leaves, chopped
  • 1/2 tsp chili powder
  • 1 tsp ginger-garlic paste
  • 1 tsp green chili paste
  • 1/2 tsp garam masala
  • 1 tbsp lemon juice

Method of making masala kachori recipe

  1. Knead a hard dough by mixing 1 tsp salt, ghee, and curd in all-purpose flour.
  2. If necessary, use a little more curd.
  3. Heat 2 tbsp oil in a pan and add ginger-garlic paste, turmeric, green chili paste, mint, coriander leaves, garam masala, salt as per taste, and gram flour.
  4. Fry it till all the liquid dries up and the mixture gathers together and the oil separates.
  5. Remove the pan from the flame and add lemon juice and mix it well.
  6. Then keep it aside to cool down.
  7. Break the dough into the desired shape.
  8. Roll each ball into a round and then a flat disc about 1/8 inch thick.
  9. Pinch the edges, slightly moisten and place the besan mixture in the center.
  10. Cover the mixture and seal the dough with a pinch.
  11. Smooth it into a proper round shape and keep it aside till it is ready to fry.
  12. Heat the oil for deep frying, add the balls, and reduce the flame and fry until it turns light brown. Serve it hot.
