It is made in different ways in different states all over India. In this recipe, we have made cardamom flavored Puran made of tur dal for stuffing and added nutmeg powder to it in very small amounts for aroma. Ingredients need to make Puran poli recipe

  • 3/4 cup Tur dal (Arhar dal)
  • 3/4 cup sugar or jaggery
  • 1/2 tsp cardamom powder
  • 1/8 tsp nutmeg powder, optional
  • 2 tablespoons ghee + to serve
  • 1 cup wheat flour + for rolling
  • 1½ tablespoons oil

Method of making Puran poli recipe

  1. Wash the tur dal 2-3 times with water and soak it in water for 30 minutes.
  2. Remove excess water from the lentils and pour them into a pressure cooker (4-5 liters).
  3. Add 1½ cups of water and close the lid of the cooker.
  4. Cook it on medium flame until it is 3 whistles.
  5. Allow the pressure inside the cooker to finish. Open the lid of the cooker and remove the excess water.
  6. Mash the lentils with a spoon. In a pan or non-stick pan, add dal, sugar, or jaggery, and ghee and keep it on medium heat for cooking. Mix them well.
  7. Stir it continuously with a spoon until the mixture thickens. It will take about 15-20 minutes.
  8. To check whether the Puran has become thick, keep the spoon standing in it and if the reflex does not fall immediately, then it is ready.
  9. Otherwise, stir with a spoon and cook for 3-4 minutes.
  10. Add cardamom powder and nutmeg powder and mix well.
  11. Turn off the gas and allow the mixture to cool to room temperature. Divide it into 6 equal portions.

Method of preparation for Puran Poli:

  1. Take wheat flour in a bowl and add oil. Add water and knead the soft dough as required.
  2. Cover the dough and let it sit for 15 minutes. After 15 minutes, knead it again and divide it into 6 equal portions.
  3. Make a circle from each side and press it between your palms and give it the shape of the dough.
  4. Take a dough and wrap it with dry flour.
  5. Place it on top of the chakla and take 4-5 inch diameter round the whole ball from the cylinder.
  6. Place Puran in the center of Puri.
  7. Pick up the edges of the rolled puri and wrap the Puran and seal the edges.
  8. Remove the extra dough and give it a round shape.
  9. Shape it into a dough by gently pressing it and wrapping it with dry flour.
  10. Roll it into a round shape of about 6-7 inches in diameter.
  11. Heat a pan on medium heat. When the griddle is medium hot, place the raw Puran poli over it.
  12. When golden brown spots appear on the bottom surface, then flip it over.
  13. Now cook on the other side as well until there are brown spots.
  14. If necessary, turn it once again and cook till golden brown spots appear on both sides.
  15. Take it out on a plate and add ghee on both sides. Similarly, make the rest of the Puran Poli as well.

Suggestions and Variations

  1. To make Puran Poli easily, prepare the stuffing in advance and keep it in the fridge for a few hours.
  2. To make soft poli, use milk instead of water for kneading the dough.
  3. You can also use chana dal to make the stuffing.
  4. To make Maharani style Puran Poli, use jaggery instead of sugar and use chana dal or tur dal.
  5. In Karnataka and Tamil Nadu, it is popularly known as Obattu and Holige. To make South Indian style Pooran Poli, use maida instead of wheat flour for the outer layer, and to make Puran use jaggery, chana dal, or tur dal, and coconut.
  6. To make Gujarati style Puran Poli, make Puran using only tur dal and sugar.
  7. To make Konkani style Puran Poli, make Puran using grated coconut, chana dal, and tur dal.
