Ingredients need to make crispy noodles

  • 2 cups boiled noodles
  • 2 tablespoons + 1 tablespoons cornflour (corn starch)
  • Oil for frying

Method of making crispy noodles

  1. Make boiled noodles (cook raw noodles for about 3 minutes till they become soft but do not overcook).
  2. Take them out in a big bowl, sprinkle 2 tablespoons of cornflour on top, and mix/bounce lightly. 
  3. Spread them on a big plate and sprinkle 1 tablespoon corn floor over it again. 
  4. Allow them to dry at room temperature for at least 30 minutes to remove excess moisture.
  5. Heat the oil in a deep frying pan/pan on medium heat. 
  6. Fry the noodles in oil till they become lightly golden and crispy. 
  7. Take them out on a paper napkin on a plate. Crispy noodles are ready.

Suggestions and Variations for making crispy noodles

  1. It is necessary to fry the noodles on medium heat. 
  2. If you fry them on low heat, they will absorb more oil and if you fry them on high heat, they will turn brown immediately but will not become crispy.
  3. Do not boil the noodles for more than 3 minutes or until they become very soft otherwise they will not become crispy after frying.
  4. You can make them in advance and keep them at room temperature for 15 days and use them when needed.
