Instructions
 

  • Wash the rice with water and soak it in 1-cup water for 4 hours.
  • Also wash all the lentils (toor dal, chana dal, and urad dal) with water and soak them in 1-cup of water for 4 hours. (You can soak rice and all the lentils together. There is no need to soak them separately.)
  • Remove the excess water from the rice and lentils and pour them into the jar of mixie.
  • Add 1/2 cup of salt and salt to it.
  • Grind them until they become soft. If needed, add 1-2 tablespoons of water to it while grinding. Do not add too much water.
  • Then remove the solution into a medium-sized pot.
  • Cover it with a plate and keep it in a warm place for about 8-10 hours to lift the yeast.

  • Heat 1-tsp oil in a small non-stick pan on medium heat. Add 1/4 tsp of mustard seeds and when they start to splutter, add 1/4 tsp cumin seeds, 1/2 tsp sesame seeds, a pinch of asafoetida, and 2-3 curry addresses.
  • Pour 1/2 cup (more or less) of the batter based on the pan height and spread it evenly with a spoon to make a 1-inch thickness pot.
  • Cover the pan with a lid or plate. Turn down the heat and cook it as shown in the photo, until the upper surface is cooked and the lower surface becomes light golden (it will take 4-5 minutes). How long it will take to cook depends on the thickness of the pot you are making.
  • Turn it over and cook covered for about 3-4 minutes till it turns light golden on the other side as well.
  • Transfer it to a plate. Likewise, prepare the Handwo from the remaining solution. Handvos are ready to be served in the evening breakfast with tea or chutney.

  • Pre-hit the oven to a temperature of 375F.
  • Pour the slurry (made in step-11) into a greased baking tray (if you are making it for a party or special occasion, use a muffin tray to serve and make it separately), over it.
  • Add the tadka (made in step-12 – 2-tablespoon oil, 1 tsp rye, 1 tsp cumin, 3 tsp sesame seeds, 8-10 curry addresses, and a pinch of asafoetida).
  • Bake it in a pre-hit oven at 375F for 40-45 minutes. The amount of time it will take to roast depends on the thickness of the pot you are making.
  • Check it after 40 minutes. Insert a knife in the middle to check whether it has been cooked; If the knife comes out clean then it is cooked.
  • If the upper surface is not light golden and crushed, broil it for 2-minutes.

  1. Do not add too much water while grinding in it.
  2. You can add vegetables of your choice to it, but do not forget to add gourd as it makes the handsome soft. You can use zucchini instead of the gourd.
  3. You can also use the Inno Fruit Solt in lieu of baking soda. If you are using eno, then add 1/4 tsp of eno to the batter every time you make the handvo.
