  • 5 cups chicken broth
  • 1 cup chopped spinach
  • 1 cup chopped green onions
  • 1/2 cup chopped parsley
  • 1/2 cup chopped basil
  • 1 cup half and half cream
  • 5 tbsps. butter
  • 2 tbsps. flour for all purposes
  • 1 tsp. white sugar
  • Salt and ground black pepper to taste

Method of making Classic Cream of Herbs Soup

  1. In a large pan, click 3 tbsps. butter over medium heat and add the onions. 
  2. Add the onions until tender before adding the spinach, parsley, and basil. 
  3. Reduce heat to low and cover for 10 minutes. 
  4. Add the chicken broth and sugar and add a little cream. 
  5. Close and hold for 30 minutes. 
  6. Add the remaining butter to the pan next to the medium heat. 
  7. Add the flour and stir frequently for at least two minutes. 
  8. Pour a little vegetable soup over the flour and mix until smooth. 
  9. Remove from heat and pour the flour mixture over the soup.

  1. We heat the olive oil in a large pan. 
  2. Add the garlic, onion, rosemary, chili flakes, cumin, and paprika, and stir until the garlic and onions are soft. 
  3. Add the squash and the edible vegetable with the watery branches and cook for 5 minutes, making sure they are full of herbs and spices. 
  4. Add the vegetable stock and bring to a boil. 
  5. Cover and hold on low heat for 40-50 minutes. 
  6. When ready, puree the soup in batches using a blender.
