Vegetable pancake: Pancake means children’s favorite breakfast and which can be made easily. But today we will tell you about the recipe of a pancake which is made from vegetables and not sweet but salty. So let’s know how to make pancake with vegetables.

Ingredients need to make vegetable pancake

For pancake

  • Rice – 1 cup (200 grams)
  • Green chili – 2 to 3
  • Ginger – ½ inch
  • Potatoes (boiled) – 2
  • Carrot – ½ cup
  • Capsicum – ½ cup
  • Tomatoes – ½ cup
  • Spinach – 4 cups
  • Green coriander – 2-3 tbsp.
  • Salt – 1 tsp
  • Red chili powder – ½ tsp
  • Cumin seeds – ½ tsp
  • Baking Soda – 4 teaspoons
  • Oil – 3-4 tablespoons

For peanut sauce

  • Peanuts (roasted) – ½ cup
  • Coconut (grated) – ½ cup
  • Salt – ½ tsp
  • Green chili – 2
  • Lemon juice – 1 tsp
  • Oil – 1 tsp
  • Mustard seeds – 4 teaspoons
  • Red chili – 2
  • Curry leaves – 10 to 12

Method of making vegetable pancake – rice cheela

  1. To make a pancake of vegetables, first soak 1 cup of rice 3-4 hours in advance.
  2. Grind finely the pieces of soaked rice, 2 to 3 green chilies and ½ inch ginger in the mixer (add water if needed).
  3. Now make 2 medium size boiled potatoes and grind them in a mixer. 
  4. After the batter is ready, take it out in a bowl and add ½ cup carrots, ½ capsicum, ½ cup tomatoes, ½ cup spinach, 2-3 tablespoons green coriander, 1 tsp salt, ½ tsp red chili powder, ½ tsp.
  5. Add teaspoon cumin seeds and 4 teaspoons baking soda and mix well (do not dilute or thicken the batter too much).
  6. Now put the pan on the gas to heat up. 
  7. Put 1 tablespoon oil in it and spread the batter evenly in the pan. 
  8. Cover the pan and let it cook for 2 to 3 minutes until it turns golden brown and also cook from the other side (keep the flame of the gas low-medium). 
  9. Make all such pancakes one by one.

To make the peanut sauce 

  1. Grind it finely by adding ½ cup of roasted peanuts (peeled), ½ cup of grated coconut, ½ tsp salt, 2 green chilies, 1 tsp lemon juice and ½ cup water in a mixer jar.
  2. Now take a pan, add 1 teaspoon of oil to it and heat it. 
  3. Break ⅓ teaspoon mustard seeds, 2 red chilies and 10 to 12 curry leaves in the oil. 
  4. Now put the tempering in the chutney.
  5. Pancake with delicious vegetables is ready.
  6. Serve it with hot-peanut-coconut chutney.

Suggestions for making best vegetable pancake

  • While making batter, take care that the solution does not become too thin or thick.
  • Cover the pancake and cook on low-medium flame until it turns golden brown on both sides.
  • You can also take vegetables of your choice.
