Material needs to make Mutton dum biryani

For rice

  • 250 grams of basmati rice
  • 1/2 teaspoon cumin seeds
  • 1 teaspoon oil
  • Salt to taste

For mutton

  • 250 grams Mutton
  • 3/4 cup yogurt
  • 3 chopped green chilies
  • Salt to taste
  • 1 cup of water
  • Other material
  • 5 tablespoons oil
  • 2 big onions
  • 1 tbsp ginger garlic paste
  • 8 chopped green chilies
  • 1/4 cup coriander leaves chopped
  • 3 tablespoons peppermint
  • Pinch saffron
  • Pinch yellow
  • 3 tablespoons hot milk
  • Salt to taste
  • Spices as required
  • 1 teaspoon cumin seeds
  • 1 teaspoon aniseed
  • 3 long
  • Three cardamom
  • 2-inch sugar
  • 2 bay leaves
  • 1 circle flower

Way to make Mutton dum biryani

  1. Put 5 whistles in a pressure cooker by adding mutton, salt, 3 chopped green chilies, curd and 1 cup of water. Let it stand for 10 minutes.
  2. Open the lid and see if the mutton has melted or not, keep it on the side.
  3. Mix saffron in hot milk, add a little yellow color too.
  4. Keep rice soaked for 1/2 hour and filter it later.
  5. Boil with a large amount of water in a large vessel, after boiling, add cumin, salt, and 1 teaspoon oil and cook it.
  6. Add soaked rice, boil for 7 to 8 minutes on high heat.
  7. Cook rice to 80% and sieve.
  8. Heat all the spices by heating 4 tablespoons oil in a vessel
  9. Roast chopped onions and chopped green chilies for 2 minutes.
  10. When the onion becomes golden, add ginger garlic paste and fry for 1 minute.
  11. Add the cooked mutton (do not add the remaining mutton stoke), fry for 8 minutes.
  12. Now put the remaining mutton stoke and cook till thickened.
  13. Put half of the mint and chopped coriander leaves.
  14. Add cooked rice and the remaining half of the mint and coriander leaves.
  15. Sprinkle yellow saffron, tightly close the lid.
  16. Stir for 15 minutes on low heat.
  17. Turn off the gas and leave it for 10 minutes.
  18. Open the lid and mix well and serve with onion salad and raita.
