  • 1 kg mutton
  • 1/4 cup ghee
  • 1 tbsp cumin seeds
  • 1 tejpatta
  • 4 whole peppercorns
  • 4 cloves
  • 1/2 tsp fenugreek seeds, rosted
  • 1 tsp fennel seeds
  • 1 tsp ginger paste
  • One tsp garlic paste
  • 1 cup onions, grated
  • 1/2 cup yogurt
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • One tbsp coriander powder
  • 1 tsp red chili powder
  • 2-3 (chopped in length) green chilies
  • 2 cups onions
  • 2 tbsp coriander leaves, chopped into pieces
  • Salt to taste

The need to make Mutton do pyaza

  1. Heat ghee in a pan, add cumin seeds, tejpatta, pepper, cloves, fenugreek seeds powder, and fennel seeds.
  2. When the grains are cracked, add garlic-ginger paste and onions.
  3. Fry it on a high flame until it becomes soft.
  4. When adding pieces of meat, keep the heat fast.
  5. Cook the meat on a high flame when the pieces are soft.
  6. Slow down the heat, apply the lid, and let it cook till it is soft.
  7. Add curd to it, cook it continuously so that the curd and spices are mixed well.
  8. Cook until fat is separated.
  9. Add garam masala, salt, turmeric, coriander, and red chili powder.
  10. Heat the heat, add green chilies and sliced onions.
  11. Cook continuously on medium heat until the oil is separated.
  12. Onions should be crunchy. Garnish with green coriander and serve hot.
