Fried Corn Recipe: An amazing recipe to eat at any party as a starter and anytime as a snack – a crispy crunchy sweet corn.
This is a very interesting and rich mango fried snack recipe, which is made with corn kernels and Indo Chinese sauce. This recipe was first made as a starter in a barbecue nation restaurant. But now it is adopted by almost all the restaurants and it is also made at some street food and fast food shops.
Fast food or street food recipes are commonly made all over India and it is quite popular among young and urban people for eating after dinner. It is very easy to make and takes very little time, as well as its taste is excellent. 
It can be made in many ways and one such popular and easy street food snack is the Crispy Corn recipe, known for its crispness and flavor.
I am making crispy fried corn for the second time and this time I will try my best to make it properly. Crispy coating on corn kernels did not last well. It was not well made and my users were complaining about it too. 
So I am reposting this recipe with the new Crispy Corn Batter. I have mixed corn and rice flour in equal proportions this time so that it has a crisp texture. After deep frying the refined flour, the coating of the corn is used to preserve it. 
The biggest problem in this recipe is that while deep frying, the coating does not stick to it. But my attempt is that this recipe post should remove this problem.
Now I would like to give you some tips and advice for making crispy fried corn. I have used very cold sweet corn kernels in this recipe, which I had previously taken out of the corn and separated and boiled. 
If you want to use fresh sweet corn kernels, you must first separate them from the corn and then boil them in water. You can also use this process for baby corn or tender corn shoots. You do not have to separate them from the corn and you can use it the same way. 
This dish is served hot and its crispness can be lost if kept for some time. So you can deep fry by coating them and fry them lightly before serving.

Material needs to make Spicy Crunchy Sweet Fried Corn

To boil:
  • 4 cups of water
  • 1 tsp salt
  • 2 cups sweet corn
For Frying:
  • ¼ cup cornflour
  • ¼ cup of rice flour
  • 1 tbsp all-purpose flour
  • 4 tsp black pepper powder
  • 4 tsp salt
  • Oil for frying
For the spices:
  • ½ tsp Kashmiri red chili powder
  • 4 tsp cumin powder
  • ½ tsp dry mango powder
  • 4 tsp salt
  • 2 tablespoons onion, finely chopped
  • 2 tbsp capsicum, finely chopped
  • 2 tbsp coriander, finely chopped

Instruction to make Spicy Crunchy Sweet Fried Corn

  1. First, put 1 tablespoon salt in a large pot and boil 4 cups of water.
  2. Now add 2 cups of sweet corn and boil for one minute.
  3. Then remove all the water from the sweet corn.
  4. Now add ¼ cup cornflour, ¼ cup rice flour, 1 tablespoon all-purpose flour, ¼ tsp black pepper powder, and ¼ tsp salt.
  5. Now mix it well so that it will be well applied to the sweet corn.
  6. Now sieve it with a sieve to remove the remaining flour from it.
  7. Now deep fry it in hot oil on medium heat.
  8. Keep stirring it from time to time and fry it on medium heat till it turns golden brown.
  9. Now take it out on the kitchen paper so that the remaining oil absorbs the paper.
  10. Take out these fried corn in a big pot.
  11. Add ½ tsp chili powder, ¼ tsp cumin powder, ½ tsp mango powder, and ¼ tsp salt.
  12. Now mix all the spices well.
  13. Add 2 tablespoons onion, 2 tablespoons capsicum and 2 tablespoons coriander.
  14. Now mix everything well.
  15. Finally, enjoy the Crispy Corn recipe with tomato sauce.

Suggestion to make Spicy Crunchy Sweet Fried Corn

  1. When the sweet corn is boiled, it will look puffy.
  2. If it is not sticking well to the sweet corn while adding spices to the sweet corn, then add 1 or ½ teaspoon of water to it and mix it well.
  3. Do not put sweet corn in the hot oil for frying and the fire should also be slow at first. If you put them in deep hot oil, fry them, and then they fall out of the pan. If this happens by mistake, then cover the pan with a plate so that the sweet corn that rises, collides with the plate and goes back to the pan itself.
  4. Spices can be more or less as per your taste. You can add red chili powder, black pepper powder, mango powder, cumin powder or chaat masala over it. If you are using chaat masala, do not add salt or reduce it first.
