Light chicken fiesta recipe: Chicken is marinated in many flavors such as tamarind, honey, and soy. It is then grilled and tossed in capsicum and onion, baked, stir-fried or barbecued.

Ingredients of light chicken fiesta

  • 6 whole leg and Thai chicken pieces
  • 2 tbsp tamarind paste
  • 4 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons Rhine wine vinegar or lemon juice
  • 2 tablespoons garlic, mash
  • 2 tsp brown sugar
  • 1/2 tsp salt
  • 1 tbsp oil
  • 5 (whole) garlic cloves
  • 3 (whole) green chilies
  • 4 (sliced) onions
  • 1 green capsicum, sliced
  • A pinch of salt

How to make the light chicken fiesta

  1. Grind the chicken in a bowl. Apply tamarind paste, soy sauce, honey, rice wine vinegar or lemon juice, garlic paste, a teaspoon of brown sugar, and a pinch of salt to them.
  2. You can use your hands to do this. Keep it to be marinated for about five hours.
  3. Now place the chicken in a baking dish. Grill in the oven for 20 minutes. Heat a pan and add oil to it.
  4. Add the whole garlic bud and green chilies. After this add onions, a small spoon of brown sugar and green capsicum and fry.
  5. Then add the grilled chicken to the oven. Stir-fry for about 10 minutes.
  6. Take the prepared chicken fiesta and keep it in the oven again for 10 minutes. Serve hot.
